6 large potatoes, washed, unpeeled
2 tablespoons unsalted butter
½ cup fat-free cheddar cheese, shredded
¼ cup green onion, chopped
18 tsp sour cream
salt and pepper (to taste)
Cut the potato in half and hollow out the inside out, leaving ¼” of?the flesh.
Mix well cheese and butter together in a small bowl. Place the potatoes halves flat on a baking dish and fill it with a 1 tsp cheese mixture. Then add some onion springs on the top of each shell.
Bake the potatoes for 20-30 minutes in the microwave at 400 degree F until potatoes are tender and cheese mixture is melted.
Then add 1 tsp of sour cream on each potato shell before serving.
